I was reading the Holiday edition of Martha Stewart’s magazine when I saw Grasshopper tarts. I was looking for a dessert to make for a holiday dinner party. I glanced over the recipe and thought it was just too much for a busy mom with two busier kids. After a day or so, I came up with this version. It is a no-bake cheesecake with a brownie crust. I thank my grandmother for the brownie recipe. My mom’s copy is still in her handwriting.
